Forge Skillet 12 in

$109.00

The Forge Skillet 12 in is the big carbon steel pan: 31 cm across the rim (12.2 in), 24 cm of flat cooking surface, 5 cm deep, 1.8 kg (4.0 lb). Four pork chops sear at once, and a stir-fry for four has room to move. At 2 mm the steel comes up to heat far faster than cast iron of this size, and the pan weighs about half as much as the Hearth Skillet 12 in. Sides slope for tossing. Pre-seasoned, so it cooks from the first day.

The steel handle is 24 cm long, with a helper handle opposite for lifting a full pan, and the cooking surface carries no rivet heads. Oven-safe to 650 °C (1200 °F); works on induction. The Bench Lid 12 in fits the 31 cm rim. Hand wash without soap, dry it on the burner, and wipe on a little oil.

Questions

Will four servings fit? Yes. The 24 cm cooking surface takes four chops or a stir-fry for four. For a deeper pan on the same 31 cm rim, the Forge Wok 12 in holds 3.5 liters.

How do I restore the seasoning if it goes patchy? Scrub the patch with the chainmail scrubber from the Bench Care Kit, dry the pan on the burner, rub in a pea-sized amount of Bench Seasoning Wax, and heat until it stops smoking. Two or three rounds and the surface is even again.

Does the Bench Lid 12 in fit the Forge 12 in? Yes. It is sized for 31 cm rims and fits this skillet, the Hearth Skillet 12 in and the Forge Wok 12 in.
