Hearth Skillet 10 in
The Hearth Skillet 10 in is the everyday pan for two: 26.5 cm across the rim (10.4 in), 21 cm of flat cooking surface, 5 cm deep, 2.6 kg (5.7 lb). Two chicken thighs, a pair of steaks, or a frittata fit on the surface, and the pan goes from the burner into a 260 °C (500 °F) oven without a thought. The cooking surface is machined smooth from the raw casting and left bare, so it takes and holds a seasoning like plain cast iron. The outside is vitreous enamel, in a choice of three colors.
The 4 mm walls hold heat through a sear and keep it through a roast. An 18 cm handle, a helper handle on the far side for two-handed lifting, and a pour spout on each rim. Induction, yes. Sold without a lid; the Bench Lid 10 in is made for this rim. Hand wash, dry on a warm burner, and wipe the iron with a little oil.
Questions
How much does it hold compared with the 12 in? The 10 in has a 21 cm cooking surface; the Hearth Skillet 12 in has 25.5 cm, which is room for two more chicken thighs. The 10 in weighs 2.6 kg, the 12 in 3.4 kg.
How do I clean the cooking surface after a sear? Hot water and a brush while the pan is still warm, then dry it on the burner and wipe the iron with a thin film of oil. For stuck-on food, the chainmail scrubber in the Bench Care Kit lifts it without taking the seasoning with it.
Which lid fits? The Bench Lid 10 in, sized for 26 to 26.5 cm rims. The same lid fits the Forge Skillet 10 in and the Hearth Grill Pan 10 in, so one lid covers three pans.
