Forge Skillet 8 in

The Forge Skillet 8 in is the light pan you reach for every morning: 21 cm across the rim (8.3 in), 15 cm of flat cooking surface, 4 cm deep, 0.9 kg (2.0 lb). Made from 2 mm carbon steel, it heats in under a minute and cools almost as fast, which is what eggs and crepes want. Sides slope outward so a crepe slides onto the plate and an omelet folds with a tilt. It ships pre-seasoned, so the first eggs can go in after a rinse and a warm-up with oil.

The steel handle is 20 cm long and leaves no rivet heads on the cooking surface. Oven-safe to 650 °C (1200 °F), which in practice means any oven and any broiler, and it works on induction. Hand wash without soap, dry on the burner, and wipe on a little oil. The pan darkens with use; that is the seasoning building.

Questions

Is 15 cm of cooking surface enough for an omelet? Yes, for a three-egg omelet or two crepes at a time. For a larger flat surface in the same steel, the Forge Skillet 10 in has 19.5 cm.

Why no soap? The seasoning on carbon steel is a thin layer of polymerized oil, and detergent wears it back. Hot water and a brush do the job; a pea-sized dab of Bench Seasoning Wax after drying keeps the surface dark and slick.

Will the Bench Handle Sleeve go on the Forge 8 in? Yes. The 20 cm steel handle is inside the sleeve's 15 to 24 cm range, and the sleeve stays on in the oven to 230 °C. Take it off for the broiler.
