Forge Skillet 10 in
The Forge Skillet 10 in is the searing pan: 26.5 cm across the rim (10.4 in), 19.5 cm of flat cooking surface, 4.5 cm deep, 1.3 kg (2.9 lb). Two millimeters of carbon steel reach a high heat fast and put a hard crust on a steak or a skin-on fillet of fish without the wait a cast iron pan asks for. The sides slope for tossing. It comes pre-seasoned from the shop, and every sear after that adds to the finish.
A 22 cm steel handle with no rivet heads on the cooking surface. Oven-safe to 650 °C (1200 °F) and works on induction. The Bench Lid 10 in fits the rim for finishing a thick cut covered; the pan is sold without a lid. Hand wash without soap, dry on the burner, wipe with a little oil. Weighs half of the Hearth Skillet 10 in for the same rim size.
Questions
Which is better for me, the Forge 10 in or the Hearth Skillet 10 in? Same 26.5 cm rim. The Forge is 2 mm carbon steel at 1.3 kg, heats fast and responds to the burner; the Hearth Skillet 10 in is 4 mm cast iron at 2.6 kg, slower to heat and holds it longer. Fish and stir-fries favor the Forge; a long roast favors the Hearth.
What if food sticks in the first weeks? Preheat longer, use more fat, and keep cooking; the seasoning thickens with every use. A coat of Bench Seasoning Wax after drying speeds it along. No soap while it is young.
Does the 10 in lid fit? Yes. The Bench Lid 10 in is made for 26 to 26.5 cm rims and fits this pan, the Hearth Skillet 10 in and the Hearth Grill Pan 10 in.
